• 4 Sunkist mandarins
  • 1 box of your favorite chocolate cake mix*
  • 1/2 cup chocolate chips – coarsely chopped
  • 6 tbsp. butter
  • 1 cup brown sugar
  • Zest of 2 mandarin
  • Powdered sugar for dusting
  • *Gluten Free – use GF chocolate cake mix
    1. Preheat oven according to the cake box instructions
    2. Start by slicing the mandarins into 8 very thin slices and zesting 1 mandarin.
    3. Next, heat the butter and brown sugar on the stove until it is a smooth glaze. Then remove from heat
    4. While the brown sugar glaze is on the stove, start your cake batter according the instructions on the box.
    5. Add chocolate chips and zest to the batter
    6. Next, grease your cupcake pan.
    7. In the bottom of each cupcake round, put a spoonful of the brown sugar glaze and then a mandarin slice
    8. On top of the mandarin slice add a scoop of cake batter
    9. Bake according to the box instructions
    10. Remove from oven and allow to cool slightly
    11. Run a knife around the edge and invert onto a plate
    12. Dust with powdered sugar
